Mouth Watering, tongue tingling ribs from the Prize Winning Smoking Chef Matthew Hillman!

Charcoal is Better but can be done with a gas grill!

You need to cook the ribs with indirect heat...Ideal is to cook low and slow, grill temperature should be between 250 - 275 degrees, cook for around 4 hours.

Best if you use Apple Wood Chips soaked in Apple Cider so that the ribs stay moist.

The Rub

1.  Cover ribs with mustard (flavor mustard is your choice) This is your base for the rub to stick to.

2.  Ingredients for the Rub

  • 1/2 cup Brown Sugar

  • 1/4 cup smoked paprika

  • 1 tablespoon  Black Pepper

  • 1 tablespoon Salt

  • 1 tablespoon Onion Powder

  • 1 Tablespoon Garlic Powder

  • 1 Tablespoon Chili Powder

  • 1 teaspoon Cayenne Pepper
